Herb-Crusted Tilapia with Garlic Spinach

Ingredients
- 4 tilapia fillets (about 5 oz each)
- 1/2 cup whole wheat breadcrumbs
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh basil, chopped
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 lemon (zested and juiced)
- Salt and pepper, to taste
- 2 tbsp olive oil, divided
For the Garlic Spinach:
- 6 cups fresh spinach
- 1 tbsp olive oil
- 2 cloves garlic, thinly sliced
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix breadcrumbs, parsley, basil, garlic, Parmesan, lemon zest, salt, and pepper.
- Brush tilapia fillets lightly with 1 tbsp olive oil and press breadcrumb mixture on top to form a crust.
- Place fillets on a baking sheet lined with parchment paper. Bake for 12-15 minutes until fish flakes easily.
- Meanwhile, heat 1 tbsp olive oil in a large skillet over medium heat. Add garlic slices and sauté until fragrant (about 1 minute).
- Add spinach, salt, and pepper, and cook until wilted, about 3-4 minutes.
- Serve tilapia fillets on a bed of garlic spinach with lemon juice drizzled on top.
